Mix all spice mix ingredients (onion powder, garlic powder, paprika, oregano, thyme, chili powder) together in a bowl.
Dice the onion and mince or grate the garlic.
Prepare the sauce by mixing mayonnaise, 2.5 teaspoons of the spice mix, salt, pepper, and a splash of lemon juice. Keep refrigerated.
Butterfly and slice the chicken breasts into even fillets. Coat them with 4.5 teaspoons of the spice mix, salt, and pepper.
Sauté the onions in avocado oil until translucent. Add the garlic and 2 teaspoons of the spice mix, stirring for 30 seconds.
Add the washed basmati rice, water, and salt to the pan. Bring to a boil, then reduce to low heat and simmer covered for 12 minutes. Let stand off-heat for 4 minutes.
Sear the chicken in a hot pan with avocado oil for 3-3.5 minutes per side until cooked through.
Rest the chicken for 5 minutes, then slice. Fluff the rice with a fork.
Portion rice and chicken into containers, drizzle with the Cajun sauce, and garnish with parsley if desired.
